Penne Spinach Salad

If you're looking for something to take to a potluck, this is a great choice. I have made this recipe for a couple of potlucks this summer and it always receives rave reviews. It is also great as a main course for a light summer meal.

Penne Spinach Salad

- 1 package penne pasta cooked
- 1 package feta cheese
- 5-6 diced Roma tomatoes
- 1 package baby spinach
- chicken diced (I usually use 2-3 breasts, but you can use as much or as little as you want, or even leave it out altogether if you want a lighter salad.)
- 3/4 cup Ranch dressing mixed with 1/4 cup milk and 4-6 oz fresh pesto (Or I use the pesto in the jar because it's cheaper. It's next to the pasta sauces.)
You can also add olive, bacon, pine nuts, or whatever extras that you think sound yummy.

Mix it all up and serve.

That's all there is to it!
