2 c. semi sweet chocolate chips
1/2 c. butter
1/2 c. all purpose flour
1/2 tsp. baking soda
1/8 tsp. salt
3 large eggs
1/2 c. sugar
2 tsp. vanilla
2 c. green mint chips (Guittard)
Preheat oven to 350 degrees. In top of a double broiler over low heat melt chocolate chips with the butter until it is well melted and smooth. Set aside. Combine all the dry ingredients and set aside. In a large mixing bowl combine eggs, sugar, and vanilla until light. Blend in the melted chocolate, then add the dry ingredients. Stir in the green mint chips and chill for 10 to 15 minutes, or until stiff. Drop by rounded teaspoonfuls onto ungreased cookie sheet. Bake 8 to 10 minutes. Cookies should be soft in the center, but not gooey, they will harden as they cool.
