6 oz cream cheese (softened
1 tsp Vanilla
Beat Together
2/3 C Heavy Whipping Cream
6 TBSP Sugar
Chill 1 hour.
Cut an X in the tip of the strawberries (about 2/3 of the way down the strawberry). Pry it open a little (like a tulip) and fill with the cream. Does about 40-50 strawberries - they are delicious and easy!
It also makes a great fruit dip with other fruits!

Pioneer Woman's Restaurant Style Salsa
I made this salsa and once it was gone, Chet asked me to make more. It is a great recipe for when you don't have fresh tomatoes.
1 can (28 Ounce) Whole Tomatoes With Juice
2 cans (10 Ounce) Rotel (diced Tomatoes And Green Chilies)
¼ cups Chopped Onion
1 clove Garlic, Minced
1 whole Jalapeno, Quartered And Sliced Thin (I only used probably 1/3 to 1/4 of my jalapeno and it was just right for our family. I don't like it to be TOO spicy, but Chet likes spicey. It was just right for both of us.)
¼ teaspoons Sugar
¼ teaspoons Salt
¼ teaspoons Ground Cumin
½ cups Cilantro (more To Taste!)
½ whole Lime Juice
Preparation Instructions
Combine whole tomatoes, Rotel, onion, jalapeno, garlic, sugar, salt, cumin, lime juice, and cilantro in a blender or food processor. Pulse until you get the salsa to the consistency you’d like—I don't like mine very chunky. Test seasonings with a tortilla chip and adjust as needed.
Refrigerate salsa for at least an hour. Serve with tortilla chips or cheese nachos.

Sweet Tortilla Chips and Apple Dip
Sweet Tortilla Chips
Flour tortilla's (use as many as you can eat:)
Cooking Spray
Cinnamon and Sugar
Preheat oven to 400. First, spray both sides of tortilla's. Then cut them into chip size strips. Put them in a bag and add cinnamon and sugar. Shake the bag. Place coated tortilla strips onto cookie sheets. Place in oven for 6 min. They may take a little longer, but watch carefully, because they can burn quickly. Letting them sit on a cooling rack helps them get a little crunchier, but it isn't necessary.
Apple Dip
2 apples (no need to peel, but get rid of the core)
1/3-1/2 banana (just depends on taste)
3 t. lime juice
2-3 T. Sugar
1 T. cinnamon
*This is a put together recipe, so add more sugar if you want, less or no banana, etc.
Save a fourth of one apple and blend everything else together (I used a food processor). Then cut the rest of the apple into small chunks and add them to mix (this step is not absolutely necessary, but it makes the dip pretty and, of course, chunky!).
